Kathy’s Black Bean Salsa

At our last meeting, Kathy R. received rave reviews for her delicious salsa, so  much so that we asked her to post it on our blog.  We have received quite a collection of yummies over the past year so be sure to check them out! Send us your favorite recipe and we will gladly post it here.

 

 

 

Black Bean Salsa

1/3 finely chopped red bell pepper
1/4 finely chopped red or sweet onion
1/4 cup chopped cucumber
1/4 to 1/2 cup chopped plum tomato
2 Tbsp chopped celery
2 Tbsp chopped seeded jalapeno pepper
1 Tbsp chopped fresh basil
2 Tbsp olive oil
2 Tbsp balsamic vinegar
1 Tbsp fresh lime juice
1 tsp minced fresh thyme
1/2 tsp ground cumin
1/2 tsp chili powder
1/2 tsp black pepper
3 minced garlic cloves
1 can black beans, rinsed and drained

Combine all ingredients in medium bowl, stir well. Cover and chill a couple of hours before serving with corn chips.
