The Jefferson County Master Gardeners recently held a potluck dinner to introduce and honor the new 2015 trainees. Nita W. brought this delicious salad to the potluck and many requested the recipe, so we are posting it here for all to enjoy. Thanks, Nita, for sharing!
Apple Fennel Salad
Combine in a large mixing bowl:
1 teaspoon fresh lemon juice
1 tablespoon honey (Nita used a little less)
1 tablespoon Dijon mustard
3 tablespoons extra virgin olive oil
1 teaspoon fennel seed (optional)
salt and pepper to taste
add:
1 fennel bulb, sliced very thin with the fine fennel leaves included
1 apple, sliced very thin
Toss lightly and serve
