Many compliments to Shirley for her delicious apple cake. Here it the recipe for all those who asked for it:
Shirley’s Apple Cake
Ingredients:
2 eggs
1 ¾ C sugar
2 heaping teaspoons of Cinnamon
½ cup of oil
6 medium apples, peeled and sliced
2 cups of flour
2 teaspoons of baking soda
Directions:
Pre-heat oven to 350 degrees, grease and set aside a 9”x13” pan or two 9” round pans.
In a large bowl, mix eggs, sugar, oil and cinnamon. Add sliced apples and mix until apple slices are coated. Mix together flour and baking soda in a separate bowl and add to the apple sugar mixture, mixing well until the flour is all absorbed by the wet mixture. Pour into pan(s) and bake for approximately 55 minutes. (my cake always took less time, so watch carefully).
